Marinated Greek Chicken
1/2 cup olive oil
1/3 cup lemon juice
1 tsp. fresh lemon zest
1 tsp. Greek seasoning
1 tsp. poultry seasoning
1 tsp. dried oregano
Black pepper to taste
Boneless skinless chicken breasts
Jasmine brown rice
Preheat your grill to medium high heat. In a small bowl which together the olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning and oregano. Trim the chicken of any excess fat and then place 4 slits on the top of the chicken breast. Place the chicken breasts in a Ziploc bag and then pour the marinade over the top. Allow the chicken to sit for an hour in the refrigerator before cooking. Grill over medium heat until cooked through. Slice the chicken and place on top of warm jasmine brown rice. Delicious!
**This marinade is also great for veggies too!
