Pineapple Chicken Stir Fry

Ingredients

  • 2 teaspoons toasted sesame oil
  • 1 tablespoon canola or vegetable oil
  • 1 pound boneless skinless chicken breast, diced into small chunks
  • 1 red bell pepper, rough chopped
  • 1 small red onion, rough chopped
  • 1 head broccoli, cut into florets
  • 1 cup fresh pineapple chunks
  • Cooked brown or white rice
  • Garnish: chopped green onions

Instructions

  1. Prep: In a large skillet or wok, heat to medium high. Add oil to hot skillet and allow it to heat till it is smoking.
  2. Cook: Carefully add the cubed chicken and cook till golden brown. Remove the chicken from the heat and set on a plate.
  3. Cook: Return the skillet to the heat and add vegetables. Cook for two minutes or just until the veggies are warmed through. Do not over cook.
  4. Cook: Add pineapple and cooked chicken to the skillet. Pour the sauce over the top and stir together over medium hey. Continue to cook just until the sauce begins to thicken.
  5. Serve: Remove from heat and serve on a bed of rice. Garnish with sliced green onions.
