Hash Brown Frittata
2 cups frozen hash browns, thawed
6 eggs, beaten
1 cup dill havarti, grated
1 cup sliced veggies (your choice)
1/2 cup cooked sausage or bacon
salt and pepper
Preheat oven to 425 degrees. Spray a pie pan with nonstick cooking spray. Press the hash browns into the bottom of the pan and up the sides. Cook for 20 minutes or until lightly browned. Remove from the oven. Reduce the oven temperature to 350 degrees. Sprinkle the cheese on the bottom and then top with veggies and sausage. Pour the eggs over the top and return the frittata to the oven to bake for 30-40 minutes or until the pie does not jiggle. Remove from the oven and allow the frittata to cool for 10 minutes before serving.
