Smoked Salmon with Cucumber Dill Sauce
2 pound salmon filet, skin on
1/2 cup brown sugar
Fresh dill
Lemon slices
1/2 teaspoon lemon pepper
1/2 cup wood chips
Foil
1 cucumber, seeded and chopped
1 cup yogurt
1/2 cup mayonnaise
2 tablespoon dried or fresh dill
Preheat grill to medium high heat. Place wood pellets in smoker as instructed or place them in foil pouch and pierce with holes. Soak cedar planks in water for at least one hour. Sprinkle salmon with lemon pepper, brown sugar, fresh dill and top with lemon slices. Put the foil wood chip pounce on the grill. Put the cedar planks on your grill or in smoker and then put the prepared salmon filet on top. Cook for 1 hour at 250 degrees.
To make the sauce: simply mix together the cucumber, dill and mayonnaise in a bowl. Add fresh lemon juice and serve with salmon.
Yield: 2 cups
