Cherry Chocolate Slice and Bakes
- 1 cup unsalted butter- room temperature
- 1/2 cup powdered sugar
- 1/2 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup maraschino cherries-chopped
- 1/4 cup chopped chocolate chips
- In a large bowl beat together the butter and powdered sugar till light and fluffy. About 2 minutes.
- Add in the vanilla and salt while beating.
- Drain the cherries and rinse with cold water.
- Chop the cherries and place on a paper towel to thoroughly drain.
- Chop the chocolate chips into small chunks.
- Add the chocolate chunks to the butter mixture. Slowing add the flour and the cherries.
- Continue to mix until it forms a large ball.
- Remove the cookie dough ball from the bowl and place on an extra large piece of plastic wrap.
- Roll out the dough into a large log that is about 3 inches in diameter.
- Wrap the log completely in plastic wrap and twist the ends and place in the refrigerator for at least 2 hours.
- To bake: Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Remove the cookie dough roll from the refrigerator.
- Cut into 1/4-1/2 inch slices and bake for 10-15 minutes or until lightly golden brown.
