Teriyaki Chicken Broccoli Bowl
- 2 chicken breasts, grilled and sliced
- 2 cups fresh broccoli, steamed
- 1/2 red pepper, sliced
- 1 zucchini, cut into 1/4 and cubed
- 2 cups white or brown rice, cooked
- Sauce:
- 1/2 cup low-sodium soy sauce
- juice of one orange
- 1/4 cup water
- 3 tablespoon light-brown sugar
- 3 tablespoon honey
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon rice vinegar
- 1 1/2 tablespoon cornstarch
- Combine all of the ingredients in a sauce pan over medium heat and cook till thickened.
- Remove from the heat and set aside.
- Saute the vegetables in 1 tablespoon coconut or canola oil till veggies are tender. (Not limp…still crisp)
- To make the bowl: add 3/4 cup rice to bowl.
- Top with sliced chicken and veggies. Drizzle with teriyaki sauce and enjoy!
