Broccoli & Ham Quiche
- 1 frozen deep dish pie crusts
- Pie weights or dried beans
- 5 eggs
- 1 cup half and half
- Salt and pepper
- 1/2 cup diced ham
- 1 cup shredded Swiss or cheddar cheese
- 1/2 cup broccoli florets
- Preheat oven to 375 degrees.
- Place a piece of parchment paper on the inside of the frozen pie crusts.
- Place 1 cup of dried beans on the parchment paper and bake the crusts for 20 minutes.
- In a small bowl whisk together the eggs, half and half, salt and pepper.
- Once the crusts are done pre-baking remove the parchment paper and beans.
- Sprinkle the cheese on the bottom of the crust and then top with the ham and broccoli.
- Pour the egg custard over the top and bake for 30 minutes or until the middle no longer wiggles.
- Serve warm with your favorite soup or salad.
***Freeze quiche by placing in a gallon sized freezer Ziploc bag
