Farro Grilled Veggie Salad
- 3 cups Italian faro grain, cooked according to package instructions
- Fresh broccoli
- Red Peppers
- Zucchini
- Red onion
- Olive oil
- Sea salt and Pepper
- Shaved parmesan cheese
- Place the faro in a large bowl.
- Brush the veggies with olive oil and grill till they are slightly charred.
- Cut the veggies into bite sized pieces.
- Add into the faro and drizzle with olive oil.
- Add salt and pepper.
- Serve with a few slices of shaved parmesan.
