Sauce
2 Tbs. olive oil
1/2 c. chopped onion
3 cloves of garlic-chopped fine-let the onion and garlic simmer a little in the oil
1 16 oz. can of tomato puree
1 16 oz. can of tomato sauce
Salt and pepper to taste
1 tsp. dried oregano
1 tsp. dried basil
1 tbsp. sugar (as it cooks and if you like a sweeter sauce-add sugar or other spices that suit your taste Add one can of water - for every can of tomato product used Let the sauce come to a slow boil then lower the heat let it go until it is the thickness you want..
(Mama Josie says she even likes extra oregano)
Meatballs
1 lb. ground round
1 egg
1/2 c. Italian bread crumbs
finely chopped parsley
finely chopped garlic
parmesan cheese
The parsley and cheese are what gives the meat a special taste. Don't be stingy with it!! Salt and pepper to taste.
When you mix all this together, add a half cup of water and continue to mix it. If it feels that it is not soft enough to work with, add a little more water. Before you form your meatballs, make a small patty and brown it so you can taste it and then add whatever you think it needs for your taste.
Form the meatballs and then brown them in the skillet using a little olive oil.
Placed cooked meatballs into the simmering sauce and continue cooking for approximately an hour. (The longer you let it simmer the better the taste.)
