Sweet Potato, Apple & Spinach Salad

Chef Sabrina from INTEGRIS and INTEGRIS Nutritionist Karen Massey offered up a quick, healthy salad for the fall season.

INGREDIENTS:
¼ cup Catalina salad dressing
2 sweet potatoes, peeled and chopped
1 onion, sliced
2 apples, chopped
1 pear, chopped
10 oz. spinach leaves


PREPARATION:
1. Heat dressing in large skillet on medium heat. Add potatoes and onion. Cook until tender.
2. Add apples and pears.
3. Toss with spinach in large salad bowl and serve immediately.


NUTRITION INFORMATION:
1 serving (1/6th of recipe, or about ½ cup) provides 140 calories, 3 grams protein, 2.5 grams fat, 0 grams saturated fat, 29 grams carbohydrate, 5 grams fiber, 0 mg cholesterol and 190 mg sodium.
