Cooler temperatures are creeping in which means fall is almost here and that means apples are in season.

Apple Dumplings
Prep time - 30 minutes
Bake time - 1 hour at 350 degrees
Serves 6
1 Double Crust Pie dough (can be made from scratch, mix or out of refrigeration case already complete)
6 Large Honey Crisp Apples
1/2 cup butter
1 cup of brown sugar
1/2 tsp ground nutmeg
1 1/2 teaspoons of cinnamon
2 cups of sugar
3 cups of water
1 1/2 teaspoons of vanilla
Heat oven to 350 degrees. Spray a 9 x 13 pan with non stick spray for easy clean up.
Roll out pastry to a 24 x 16 inch rectangle on a slightly floured surface. Cut into 6 - 8 inch squares. Cut butter into 8 pieces. Place one piece in each apple that has been cored out. Use rest of butter for sauce.
Divide the brown sugar between the apples and put remaining around bottom of apples in the pan for the sauce. Sprinkle apples with cinnamon and nutmeg.
Place apple in the center of the dough piece. Bring up each corner and pinch together - using wet fingertips will help get it to seal.
Combine water, white sugar, vanilla and reserved butter in a saucepan. Place over medium heat and bring to a boil. Reduce heat and simmer until all sugar is dissolved. Carefully pour over the dumplings.
Bake for 50 minutes to an hour. Place in each dumpling in an individual bowl and spoon sauce over it. Can finish it off with some fresh cream or ice cream for a wonderful treat to welcome fall.
