Sassy Mama shares her Irish Cottage Pie recipe.
Irish Cottage Pie:
- 1 pound lean ground beef
- 1 teaspoon olive oil
- 1 cup onion, chopped
- 2 carrots, chopped
- 3 ribs celery, chopped
- 1 teaspoon thyme
- ½ teaspoon garlic powder
- ¼ cup red wine
- 1 tablespoon Better than Bullion (Beef flavor)
- 2 teaspoons corn starch
- 1 ½ cup water
- 1 teaspoon salt
- 1 teaspoon fresh cracked pepper
Cheesy Potato Top:
- 3 cups mashed potatoes
- 2 teaspoon Irish butter
- ½ cup Irish cheddar cheese
- 3 tablespoon grated parmesan cheese
- 2 teaspoons Irish butter melted
- Fresh parsley, chopped
Instructions:
- Preheat oven to 375 degrees.
- In a large skillet, brown the ground beef and drain any excess fat.
- Place the skillet with the ground beef back on the stove top and sauté the vegetables till tender.
- Stir in the thyme, garlic powder, salt and pepper.
- In a small bowl whisk together the water, bouillon base, red wine and corn starch.
- Pour the mixture into the skillet and stir until it thickens. Remove from the heat.
- Make mash potatoes as normal or use store bought mashed potatoes in the refrigerator section.
- Heat the potatoes till they are hot.
- Stir in the Irish butter and cheddar cheese until smooth.
- Add 1-2 teaspoons fresh parsley and stir.
- In a 9x13 baking pan or smaller individual pie tins fill the baking container ¾ full with the meat mixture.
- Add a large spoonful of the cheesy potatoes on top and spread to cover the meat completely.
- Sprinkle with parmesan cheese and drizzle with melted butter.
- Bake 30 minutes until bubbly.
- The last five minutes turn the broiler on high to brown the cheesy potatoes and form a crust.
