No-Fail Barbecue Chicken

• Chicken thighs, legs, wings
• 2 cloves garlic, smashed
• Juice of 1 lemon
• Herbs: peppercorns, rosemary, thyme
• 1 cup brown sugar
• 2-3 T. salt
• 2 cups chilled water

Combine all ingredients in a large plastic bag. Allow to marinate overnight in the refrigerator. Before placing on a hot grill, remove chicken from brine and pat dry.
