Meatball Soup for Two
8 -10 frozen meatballs
1 box unsalted chicken stock
1/2 cup sliced mushrooms
1 rib celery, chopped
1/2 onion, chopped
1 carrot, chopped
1 cup baby kale
1 teaspoon Tuscan or Italian seasoning blend
1/2 cup pasta or rice (optional)
In a stockpot sauté the onion, carrots, celery, seasoning and mushrooms in olive oil till tender. Pour the entire box of chicken stock in the pot. Add the meatballs and pasta and cook till warmed through and pasta/rice is cooked. Finish with a handful of kale. Serve!
