Garlic Three Cheese Grits
1 1/2 cups quick grits
4 cups milk
1 stick unsalted butter
1 teaspoon minced garlic
1/4 cup Boursin cheese
1 cup sharp cheddar cheese, grated
1 cup mexi cheese blend, grated
1/2 teaspoon salt
1/2 teaspoon pepper
In a large stock pot bring the milk and butter to a simmer. Stir in the grits and continue stirring until the grits begin to thicken. This should take about 5 minutes. Once the grits have thickened stir in the Boursin cheese, both cheeses, salt and pepper. Stir till melted and serve as a side dish.
*I serve this with sliced brisket over the top with a drizzle of BBQ sauce.
