Hanukkah Favorites: Sweet Potato Latke
Ingredients:
2 baking potatoes, grated
1 sweet potato, grated
1/4 cup green onion chopped
1/4 cup Italian bread crumbs
1 tsp thyme
3 tbsp flour
3 tbsp butter
3 large eggs, beaten
olive oil
Salt
Directions:
Grate all of the potatoes on a box grater. Allow potatoes to drain in a colander. Place in a bowl and mix in the green onions, Italian bread crumbs, flour, thyme and salt. . Stir in the eggs.
Preheat oven to 375 degrees. In a large skillet place 1/4 inch of olive oil and butter in the bottom of pan and heat. Using a large cookie scoop place large scoop into hot oil and flatten to pancake size. Cook till browned on each side. Place cooked latke on paper towel lined plate and place into hot oven for 15-20 minutes. Serve with sour cream and homemade applesauce.
