Greek Zucchini Fritters

Greek Zucchini Fritters
- 1 1/2 - 2 cups zucchini, grated
- 8 green onions, chopped
- 3 tablespoons dill
- 2 eggs
- 3/4 cup feta cheese, crumbled
- 1/4 teaspoon nutmeg
- 1/2 cup flour
- Salt and pepper to taste
- Olive oil
- Drizzle olive oil into a medium sized skillet over medium high heat.
- In a a large bowl, mix together the rest of the ingredients.
- Use a 1/2 cup measuring cup to portion out the fritters and set into the hot skillet.
- Cook for 4 minutes on each side or until browned.
- Serve with tzatziki sauce.
** Make these in a large batch and freeze for future use, reheat in a 30 degree oven for 20 minutes or in a microwave!**
