Cinco de Mayo is this week, and Sassy Mama has some recipes perfect for those who are celebrating.
In today’s Sassy Mama segment, Sassy is showing the News 9 team her recipe for refried beans.
Ingredients:
- 2 cups pinto beans
- 5 cups water
- 2 slices thick cut bacon, cubed
- 1 onion diced
- 3 cloves garlic, diced
- 2 teaspoon salt
- 1 teaspoon pepper
- ½ cup lard
- ½ - 1 cup water
Directions:
- Prepare the beans by cooking in a slow cooker with 5 cups water, bacon, onion, 2 cloves of garlic, salt and pepper.
- Once the beans are cooked, drain and set aside.
- To make the refried beans add ¼ cup of lard to a skillet over medium heat.
- Add ½ of the beans and press with a potato masher.
- Add water till you receive the desired texture you are wanting.
- Thinner beans are perfect for scooping and thicker is best for burritos or tostadas.
