News 9's Sassy Mama is sharing an easy way to make eggs, that makes the perfect breakfast/brunch sandwich!

Easy Baked Eggs

Ingredients:

  1. 12 beaten eggs
  2. 1/4 cup milk
  3. Salt and pepper to taste
  4. Nonstick spray
  5. Parchment paper or foil
  6. Optional: 1/2 cup chopped veggies

Instructions:

  1. Preheat oven to 400°F.
  2. Line a 1/4 baking sheet with parchment or foil and spray with nonstick spray.
  3. In a bowl, mix eggs, milk, salt, and pepper. Pour onto the baking sheet.
  4. Bake for 10-15 minutes until set. Cut into squares.

 Brunch Tailgate Sandwiches

Ingredients:

  1. - 10 egg squares (from above)
  2. - 10 slices precooked bacon, ham, or sausage
  3. - Ground black pepper
  4. - 10 mini everything bagels
  5. - 8 tbsp room-temperature cream cheese
  6. - 10 slices American cheese
  7. - 4 tbsp melted unsalted butter

Instructions:

  1. Preheat oven to 350°F and spray a 9x13 dish with cooking spray.
  2. Lay bagel bottoms in the dish. Smear cream cheese on bagel tops and set aside.
  3. Place an egg square on each bagel bottom. Add your chosen protein and a cheese slice.
  4. Put bagel tops on, smear side down.
  5. Brush with melted butter.
  6. Bake for 15 minutes or until toasted.
