Tired of plain spaghetti? Try Sassy Mama's Italian Spaghetti Squash Boats!
Ingredients
- 1 spaghetti squash
- Olive oil
- Salt and pepper
- 1 cup spaghetti sauce
- ½ cup Italian cheese blend
- 1 cup protein of your choice (I use precooked rotisserie chicken or Italian sausage)
- Fresh sweet peppers, chopped
- Fresh mushrooms, chopped
- Fresh basil
Instructions
- Sassy Kitchen Trick: To cut a spaghetti squash in half easier, simply prick the exterior of the squash with a fork and microwave for 4 minutes. Remove from the microwave and carefully cut in half lengthwise.
- Preheat Oven: Preheat oven to 400 degrees.
- Cook: Line a baking sheet with parchment paper. Brush the inside of the squash halves with olive oil and place cut side down. Cook for 30 minutes.
- Add ingredients: Remove from the oven. Use a fork to loosen the strands of the spaghetti squash. Stir in the spaghetti sauce, veggies, and protein equally into each squash half.
- Finish baking: Top with cheese and return to the oven to bake an additional 15 minutes.
