A bright and fresh dinner perfect for a summer evening.
Ingredients
- 1 zucchini, cut into 1 inch cubes
- 1 yellow squash, cut into 1 inch cubes
- 1 red onion, diced
- 2 Roma tomatoes, seeded and diced
- 1 yellow pepper, cut into 1 inch cubes
- ½ teaspoon thyme
- 2 cloves garlic, minced
- Diced mushrooms, diced
- 1 tablespoon capers
- Olive oil
- ¼ cup white wine
Instructions
- Prep: Drizzle sauté pan with olive oil, and sauté the onions till tender.
- Prep: Add garlic and the rest of the veggies.
- Cook: Continue to sauté just until they are fork tender.
- Cook: Add 1/4 cup of capers.
- Combine: Stir in the white wine.
- Combine: Salt, pepper, and fresh thyme.
- Serve: Remove veggies from the pan and serve as a side dish or as a meal.
