Description
Chef Devin Levine from the Arvest Convention Center showed us how to make Buttery Cajun Crab Pasta.
Ingredients
- 1 Lb Lump Crab
- 4 Oz Butter
- 4 Oz Olive Oil
- 8 Oz Heavy Cream
- 8 Oz Chicken Broth
- 2 Tbsp Cajun Spice
- 1 cup Holy Trinity (onion, pepper, celery)
- 1 lb Farfalle Pasta, cooked
- 6 Oz Parmesan Cheese, grated
- 6 Oz Mozzarella, shredded
- ½ cup Scallions
- 2 cups Cajun Fried Red Onions
Instructions
- Step 1: Heat olive oil and butter in large skillet over medium heat.
- Step 2: Add holy trinity and garlic and sauté till softened.
- Step 3: Add heavy cream, chicken stock and Cajun spice, allow to simmer and reduce slightly.
- Step 4: Add pasta and crab and gently fold to coat pasta.
- Step 5: Add cheeses and scallions and stir to combine.
- Step 6: Transfer to entrée bowl and garnish with additional cheeses and scallions. Top with fried red onions.
