Ingredients
- 2 3/4 C. old fashion rolled oats
- 1 C. unsweetened flaked coconut
- 1/3 C, raw pumpkin seeds
- 1/3 C. raw unsalted pistachio
- 1 TBLSP. kosher salt
- 1/2 C. light brown sugar
- 1/3 C. extra virgin olive oil
- 1/3 C. maple syrup
- 3/4 C dried sour cherries
Instructions
- Preheat: Preheat oven to 300°F
- Simmer: Add brown sugar and maple syrup to a pan and cook on medium heat, bring to a simmer and add olive oil.
- Assemble: Add oats, coconut, raw pumpkin seeds, pistachio to a bowl and pour brown sugar and maple mixture over. Mix until combined.
- Bake: Place the mixture on a lined baking sheet and cook in the oven for 1 hour, while stirring the mixture every 15 minutes. Store in air tight container.
