Savory Stuffing
Ingredients:
2 boxes of Shawnee Mills cornbread mix, prepared according to package
1 package of Pepperidge Farms seasoned bread cubes or crumbs
1/2 pound of sausage, browned
2 cups of seasoned bread crumbs
1 onion, chopped
1 cup celery, chopped
2 1/2 cup chicken stock
1 teaspoon Creole seasoning
1 teaspoon thyme
1 teaspoon sage
1 teaspoon salt
1 teaspoon pepper
Directions:
Crumble cornbread in a large bowl. In a medium skillet sauté sausage, celery and onion till tender. Pour the chicken stock and sautéed sausage mixture over the cornbread and seasoned bread crumbs till it is moist and holds together. Sprinkle in the thyme, sage, salt and pepper. Place dressing mixture in a greased casserole dish. Bake for 30-40 minutes.
