Sweet Lemon Ricotta Kugel

Sweet Lemon Ricotta Kugel
- 1 (12-ounce) package wide egg noodles
- 4 tablespoons unsalted butter (melted)
- 1 (16-ounce) container sour cream
- 1 (15-ounce) container ricotta cheese
- 3/4 cup sugar
- 3 large eggs, beaten
- 2 Meyer lemons, zested and juiced
- 1 tablespoon vanilla
- 1/4 teaspoon salt
- 1/2 cup dried tart cherries
- 1/2 cup golden raisins
- Cinnamon sugar
- Preheat oven to 350 degrees.
- Spray a 9x13 baking pan with nonstick cooking spray.
- Cook egg noodles in boiling water for 7 minutes or until al dente.
- DO NOT OVERCOOK!
- Drain noodles and return to the warm pot.
- Add butter and stir together.
- In a large bowl, whisk together the sour cream, ricotta cheese, lemon zest, lemon juice, salt, eggs and vanilla.
- Fold in the noodles into the custard mixture.
- Stir in the dried fruit.
- Pour the noodle mixture into the prepared baking dish.
- Sprinkle with cinnamon sugar and cover with foil.
- Bake for 45-55 minutes or until warm and bubbly.
