Original Caesar Dressing
“Inspired by Caesars Restaurant in Tijuana, Mexico - Home of the Original Caesar Salad”
- 2 anchovy filets
- 2 cloves garlic, chopped
- 1 teaspoon Dijon mustard
- 1 egg yolk
- 2 teaspoon Worcestershire sauce
- 1 lemon, juiced
- 3-4 tablespoons freshly grated Parmesan cheese
- 1/2 cup olive oil (sometimes I use 1/2 Olive oil & 1/2 vegetable oil)
- On a chopping board, use your knife to scrape the anchovies & garlic together to make a paste.
- Transfer to a small bowl and set aside.
- Bring a small pot of water to a boil.
- Boil the egg for 50 seconds and then quickly remove from the boiling water.
- Crack the egg and separate the egg yolk.
- Whisk in the egg yolk, fresh lemon juice, Worcestershire sauce, and Dijon mustard till smooth.
- Slowly add in the olive oil as you continue to whisk.
- Add fresh cracked pepper and grated Parmesan cheese.
- Drizzle dressing over fresh greens.
- Store extra dressing in an airtight container for a week.
