Cooking expert Sassy Mama shows us how to make a delicious recipe for peach bread.
Ingredients
1/3 cup butter, softened
1 cup sugar
2 large eggs
1/3 cup milk
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon cinnamon
1 cup diced peeled peaches
1-2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
Crumble topping:
1 cup flour
1/2 cup brown sugar
2 teaspoons cinnamon
1/4 cup cold butter, cut into cubes
Directions
Preheat oven to 350 degrees. Spray loaf pan with nonstick cooking spray. Beat together the softeners butter and sugar until smooth.
Stir in the eggs, vanilla & almond extract and peaches. Add the fry ingredients and stir until batter is smooth.
Pour the batter into the prepared loaf pan. To prepare the crumble topping: use a fork or food processor for easy mixing. Add the crumble toppings to a bowl and either use fork to break the butter into the dry ingredients until it looks like damp sand or pulse on high in a food processor.
Sprinkle the topping over the top of the loaf. Bake for 1 hour or until a knife poked into the center comes out clean.
**Sassy Tip: to keep the topping from over browning place a sheet of foil over the top after about 45 minutes in the oven.
