News 9's Sassy Mama shares her Strawberry & Cream Sheet Cake recipe after attending the Strawberry Festival in Florida.
Sheet Cake
- 4 cups cake flour
- 2/3 cup granulated sugar
- 5 teaspoons baking powder
- 2 teaspoons salt
- 1 1/2 sticks cold unsalted butter, cut into pieces
- 1 1/4 cups buttermilk
- 1/2 teaspoon cinnamon
- Heavy cream, for brushing
- Cinnamon sugar, for sprinkling
Berries and Cream
- 4 cups sliced strawberries
- 3 tablespoons honey
- 1/4 teaspoon kosher salt
- 1/2 lemon, juiced
- 1 1/4 cups heavy cream
- 2 teaspoons vanilla or vanilla paste
- 3 tablespoons confectioners’ sugar
Cake Instructions
- Preheat oven to 450 degrees.
- Line a baking sheet with parchment paper and set aside.
- In a large bowl or food processor for easier preparation, mix together the cake flour, butter, salt, sugar, baking powder and cinnamon until it becomes a sand-like consistency. If you do not have food processor using clean hands or a pastry blender works best.
- Add the buttermilk to the bowl and mix together until a “shaggy” ball of dough is formed. Make sure the flour is fully incorporated into the dough. Make sure NOT to overwork the dough.
- Turn out onto the baking pan and press into a rectangle that is 1- 1 1/2 inch in thickness.
- Brush with cream and sprinkle with cinnamon sugar.
- Bake for 25-30 minutes or until golden brown.
- Remove from the oven and cool completely.
Berries & Cream Instructions
- While biscuit shortcake is cooking, prepare the strawberries and cream. In a medium bowl combine the sliced strawberries, honey and lemon juice.
- In a separate chilled mixing bowl beat the heavy whipping cream, vanilla and powdered sugar till stiff peaks form.
- Chill the whipped cream and strawberries until ready to use.
To assemble sheet cake, spread the whipped cream over the top of the cooled shortcake and add strawberries on top!
