We're happy to welcome back Joe Davidson from Oklahoma Joe's to the Cooking Corner. This time he's showing us how to do the brine to make some pastrami.
Water- 2.5 gallons
· Coarse Salt- 96 oz
· Pink Curing Salt- 24 oz
· Sugar- 12 cups
· Brown Sugar- 6 cups
· Honey- 3 cups
· Pickling Spice- 1.5 cups
· Coriander- ¾ cup
· Mustard Seed- ¾ cup
· Minced Garlic- 3 cups
Add all ingredients to water and bring to a low boil in a big pot. Remove from heat immediately after coming to a boil.
Divide brine into two bus tubs or two pickle buckets with lids
Add ice to brine to cool down
Place 3 briskets into each tub/ bucket and add enough ice to make liquid completely cover the briskets.
Soak in brine for 5 days
Remove from brine and rub down with Brisket Rub and smoke as usual. 12 hours at 190- check for tenderness and finish off at 275 for bark and tenderness.
