Italian Meatloaf

Description

An Italian staple, great dinner for the family.


Ingredients

  • 1 pound ground beef (85% fat)
  • 1 pound ground pork
  • ½ red pepper, diced
  • 1 white onion, diced
  • ½ yellow pepper, diced
  • 1 cup Italian bread crumbs
  • 1 egg, beaten
  • ½ teaspoon ground pepper
  • ½ teaspoon salt
  • 1 tablespoon Italian seasoning
  • ½ cup parmesan cheese, grated
  • 1 cup mozzarella cheese, ¼ inch cubes
  • 1 cup marinara sauce

Instructions

  1. Prep: Preheat oven to 375 degrees.
  2. Prep: Spray a loaf pan with nonstick cooking spray.
  3. Prep: In a large bowl, mix all of the ingredients except for the marinara sauce. Do not “over mix” the meat mixture. It will make for a tough meat loaf.
  4. Combine: Pour the marinara sauce into the prepared loaf pan.
  5. Combine: Press the meat into the loaf pan.
  6. Cook: Set the loaf pan on a baking sheet and put into oven to bake for 45-60 minutes.
  7. Cook: The meatloaf is done once it reaches an internal temperature of 160 degrees.
  8. cool: Remove from the oven and carefully invert onto a serving platter.
