Sassy Mama has shared her delicious and easy recipe for gluten-free peanut butter cookies.
Ingredients
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 large egg, lightly beaten
- Coarse sea salt, for sprinkling
Instructions
- Step 1: Preheat your oven to 350 degrees and check the oven racks are placed in the upper and lower thirds. Line a baking sheet with parchment paper.
- Step 2: In a medium-sized bowl, thoroughly combine the peanut butter, sugar, vanilla extract, and beaten egg until smooth and well blended.
- Step 3: Use a cookie scoop to easily portion cookies onto baking sheet leaving 2 inches between each scoop.
- Step 4: Dip the tines of a fork into sugar and flatten the cookie mounds; dip tines again in sugar and press across the original press.
- Step 5: Sprinkle a pinch of coarse sea salt on top of each cookie before baking.
- Step 6: Bake the cookies for approximately 10 minutes, or until they are golden around the edges.
- Step 7: Once baked, transfer the cookies to cooling racks to cool completely.
