In a medium sauce pan melt the butter, 1 pound semi sweet chocolate, and bitter sweet chocolate until smooth.
Remove from heat and cool.
In a large bowl mix together the eight eggs, vanilla, and coffee granules.
Simply mix together, do not beat.
Preheat oven to 350° and line a 12 x 18 baking sheet with parchment paper I have the sides with butter or nonstick cooking spray.
In a small bowl mix together 2 cups flour, baking powder and salt.
Use the remaining 1/4 cup of flour to mix with the 12 ounces of semi sweet chocolate chips.
Stir in the warm chocolate and mix together with the egg mixture.
Add the dry ingredients to the chocolate mixture.
Do not over mix the batter.
Fold in the chocolate chips & flour just till combined.
Pour the batter into the prepared pan and bake for 20 minutes and then remove from the oven and bang on your countertop to release air bubbles rotate pan and bake for an additional 15 minutes.
Do not overbake.
Remove the brownies and allow them to cool on a countertop and then chill In the refrigerator for two hours before cutting into squares.
