Sassy Mama: Spring Cupcakes

News 9's Sassy Mama shares her spring cupcake recipe, perfect for Easter weekend.

Ingredients:

1. 1 white cake mix
2. 4 egg whites
3. 1 1/4 cup water
4. 1/2 cup sour cream
5. 1/2 cup melted butter
6. 1/2 teaspoon coconut extract

Toppings:

1. 3 cups vanilla frosting
2. 2 cups shredded coconut
3. green food coloring
4. gallon sized bag
5. small candy eggs
6. small chocolate bunnies

Instructions:

1. Preheat oven to 350 degrees. Line cupcake pan with baking cups.
2. Mix together the cake mix, eggs, water, butter and sour cream using an electric mixer till smooth.
3. Stir in extract.
4. Use an ice cream scoop to add the batter to the cups.
5. Bake in the oven for 25-30 minutes or until the golden brown.
6. Remove from the oven and cool completely before decorating.

To decorate:

1. Pour flaked coconut to the Ziploc bag. Add drops of food coloring to bag and agitate till the coconut turns green.
2. Frost the cupcakes and then press the coconut onto the top of frosting and then gently decorate with candy!
