Description
Pair this with the pineapple stir-fry sauce!
Ingredients
- 2 teaspoons toasted sesame oil
- 1 tablespoon canola or vegetable oil
- 1 pound boneless skinless chicken breast, diced into small chunks
- 1 red bell pepper, rough chopped
- 1 small red onion, rough chopped
- 1 head broccoli, cut into florets
- 1 cup fresh pineapple chunks
- Cooked brown or white rice
- Garnish: chopped green onions
Instructions
- Prep: In a large skillet or wok, heat to medium high. Add oil to hot skillet and allow it to heat till it is smoking.
- Cook: Carefully add the cubed chicken and cook till golden brown. Remove the chicken from the heat and set on a plate.
- Cook: Return the skillet to the heat and add vegetables. Cook for two minutes or just until the veggies are warmed through. Do not over cook.
- Cook: Add pineapple and cooked chicken to the skillet. Pour the sauce over the top and stir together over medium hey. Continue to cook just until the sauce begins to thicken.
- Serve: Remove from heat and serve on a bed of rice. Garnish with sliced green onions.
